At La Mascaronne, theolive trees are spread across the estate. They give additional charm to the site while fully contributing, with the surrounding vines, forest and flora, to the balance of this rich ecosystem. La Mascaronne produces extra virgin olive oil from its olive trees, AOP Provence, certified Organic Agriculture.
Our olive oil comes from the Aglandau, Bouteillan and Cayon varieties. It has an expressive nose of almond, apple and hay. The palate is dominated by artichoke and almond. It is a delicate and balanced oil with moderate bitterness and slight pungency. It will go perfectly with your salads and fish carpaccio.
